Shouldn't there be pull-downs to change PHP version and web server?

I think this is odd. Why no pull-downs?

This seems to be the case whenever the ‘Preferred’ Local Environment is chosen for the new site, as opposed to ‘Custom’. In other words, you can choose ‘Custom’ and then subsequently tinker with it, but the ‘Preferred’ option is locked down forever (I suppose it could break something if you set a ‘Preferred’ site up and connected it to Flywheel’s servers and subsequently changed your local environment to something not supported at Flywheel).

I’m not sure what happens if you choose ‘Preferred’ and then the definition of the ‘Preferred’ environment itself is updated with a new release of LbF - e.g. if php is updated, does that update existing Local sites?
